Chaos-Free, Healthy Family Dinner Ideas

Being crunched for time at dinner with a hungry family is never fun! We’re here to help! School is starting back up for the kids, and even though they are out of the house now, the days are still busy, if not busier. Take these tips from the TITLE Boxing Club staff for some quick and easy chaos-free dinner ideas that everyone will love. Plus these recipes keep nutrition top of mind so your family stays healthy all year!

Chicken Salad Sandwiches (10-15 Min)

Easily an over looked idea, having sandwiches for dinner, but this healthy meal is fast to make (especially if with leftover chicken) and satisfying to all taste buds.

¼ cup low-fat mayonnaise
2 tbsp. pesto
1 tbsp. fresh lemon juice
¼ tsp. salt
1/8 tsp. ground black pepper
1 ½ cups (8oz.) chopped cooked skinless, boneless chicken breast
¾ cup chopped peeled cucumber
1 cup grape tomatoes, halved
1 cup alfalfa sprouts
Whole wheat bread (optional)

Combine and mix the first 5 ingredients in a medium bowl. Combine chicken, cucumber, tomatoes and mayonnaise mixture in a large bowl; mix gently. Spread chicken salad on bread slices, top with sprouts and another bread slice.

Homemade Chicken Fingers (25 Min)

Say goodbye to the take-out menu or the drive thru, because this is a homemade version of every kid’s favorite meal.  Same great taste, but so much healthier! 

¼ cup plain 2% reduced-fat Greek yogurt
2 tbsp. spicy brown mustard
1 tbsp. honey
½ cup all-purpose flour
1 tsp. paprika
1 tsp. black pepper
1 tsp. coarse or kosher salt, divided
2 large eggs
1 cup whole-wheat panko (Japanese breadcrumbs)
1 pound chicken breast tenders, halved lengthwise
3 tbsp. olive oil, divided

Mix yogurt, mustard and honey in a small bowl. Combine flour, paprika, pepper and ½ tsp. salt in a shallow dish. Break the eggs into another shallow dish; stir with a whisk until smooth. Place panko in a third shallow dish. Dredge each chicken strip in flour mixture. Dip strips in egg wash.  Roll in panko.

Heat 2 tbsp. olive oil in a large pan, over medium heat. Add half of chicken strips; cook, turning occasionally, 4-5 minutes or until crumbs are brown and chicken is done. Remove and repeat with remaining chicken strips and oil. Sprinkle chicken with remaining ½ tsp. of salt and serve with honey-mustard for dipping.

Tuesday Taco Salad (20-30 Min)

Taco Tuesday with a twist! This tasty recipe adds that extra bit of healthy to a classic dish! Taco salads are just as satisfying to the taste buds, but healthier! The family is bound to love this fun dish. 

½ pound lean ground beef
1 ½ cups shredded cheddar cheese, divided
½ cup salsa, divided
8 cups salad greens
1 cup chopped tomato
1 ½ cup black beans

Brown beef in large skillet, remove from heat. Stir in 1 cup of shredded cheese and ¼ cup of salsa. Mix.  Spoon onto serving platter. In a large bowl, toss together salad greens, tomatoes, black beans, and remaining cheese and salsa. Spoon salad over meat mixture and serve.
